Busy busy

We have been busy the last few weeks. We have been walking and hiking and going on play dates. We have been to the museum and to the nature center and to parks. We have painted the porch and stained the fence. We have also begun changing our diet to be healthier, since we noticed Smiley likes sweets a little too much! It’s been good though, keeping lots of fruits and vegetables around and eating a lot of variety of the healthier stuff. Still, I have a weakness for baked foods- I probably always will! I’ve cut back a lot, but it’s still fun to try new things, and lately I have been using lots of dried food in my experiments.

Tonight, I tried something new and made a Welsh fruit bread/cake known as Bara Brith (Speckled Bread). It is delicious! Below is the recipe I used:

2 cup of milk
2 cup of sugar
2 sticks butter
2 cups dried berries (I used blueberries and cherries from my sister)

Heat the above ingredients in saucepan and allow to cool. The add the below to the mixture in the saucepan:

2 cups flour
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon of salt

Mix well and add in 2 eggs. Mix again, and divide batter evenly between two loaf pans. Bake for about 45 minutes or until the loaves are firm when you touch the tops. Let cool a bit, then enjoy!

Try it- it tastes like Fall! I’ve never enjoyed traditional fruit cakes, but this bara brith is amazing! Everyone in the family loved it.
